Chef Arnold Yescas, the self-professed “crazy guy behind the scenes” at the Underground Flavour Group, passionately describes the ‘movement’ he’s catalyzing: his goal is no less than a revolution in culinary culture.Yescas founded Underground Flavour Group (U.F.G.) two years ago as a collective of local hospitality industry folk hosting pop-up events in various venues. Last December he leased space previously occupied by Gilt Restaurant, where he once sous-cheffed. It provides a venue and inspected facility for ghost kitchens and others to reach customers via the pop-up experience.
